Increasing Immunity During Summer


This soup/drink is wonderful for boosting immune system function and general detoxification. A side benefit: the liquid is also great for clearing pimples!

Serves 4 

3 ounces adzuki beans 赤小豆 
2 ounces mung beans 綠豆  
3 ounces black beans 黑豆   
2 ounces honeysuckle 金银花
1/2 ounce licorice root or rock sugar 甘草/ 冰糖        
8 cups water        

Soak beans in warm water for 1 hour. If you use licorice root instead of sugar, soak the licorice with the beans. Drain and discard the water. Place the 8 cups of water in a pot and add all the beans and licorice, if using. Bring to a boil over high heat. Turn the heat down to medium and simmer for 1 1/2 hours, until reduced to 4 cups. Add the sugar, if using, 10 minutes before serving.

People with gout, kidney stones, stomach issues, and infections cannot drink this soup as it may worsen their condition. Traditional Chinese Medicine does not recommend beans for these individuals. You can eat the beans after you finish the drink.
